Basil Pesto Zoodles Recipe

This is a recipe that takes 5 minutes to make, will leave you feeling good about yourself and will make you come back for more! No stodgy pasta or heavy creams!

 

INGREDIENTSzoodle5

  • 4 large zucchinis
  • 2 radish
  • 1 cup cherry or grape tomatoes
  • 1 cup basil pesto
  • 1 tsp oil (I prefer rice bran oil but you can use any)

 

INSTRUCTIONS

 

STEP 1

Using a spiralizer (Check out the WonderVeg Vegetable Spiralizer) make the Zucchini noodles
.

STEP 2

Put burner heat onto high. In a large fry pan add the oil and heat for 30 seconds. Add the Zoodles and
pesto and fry for 90 seconds. This is to soften the zoodles but not to bring them too far past al dente.

STEP 3

Add the radish and tomatoes and serve.

 

 

If you’re wanting a lighter meal, use just an olive oil, chilli and garlic sauce.
